<blockquote><span style="font-size: small; font-family: Calibri;">I’m preparing to go out of town so I’m going to make this short and extra sweet.  Here’s a quick and easy dessert to tide you over through the weekend while Katy and I are up in NYC eating and sampling and did I mention eating our way through the city.  In case you’re full from dinner and debating if this dessert is necessary it is!  Dessert is always necessary.  </span></p>

<p class="MsoNormal" style="margin: 0in 0in 0pt;"><span style="font-size: small; font-family: Calibri;">The inspiration behind this Icebox Cake came from none other than Magnolia Bakery.  Yes, I do know that every post you read on Icebox Cake alludes to the same legendary cupcake shop, but you can’t judge until you’ve had a slice.  It’s amazing!  Thank you NY friends for making the introduction and sharing a Mint Chocolate piece of so that I did not have to eat it all by my lonesome.  Wait – I take that back. </span></p>

<p class="MsoNormal" style="margin: 0in 0in 0pt;"><span style="font-size: small; font-family: Calibri;">Tagging onto this post, we plan to document our culinary adventures through the city.  There is never, ever enough time to sample all of the amazing restaurants, candy shops, street carts, and frozen yogurt places that the city has to offer, but I promise that we will try our best.  </span></p>

<p><strong><span style="text-decoration: underline;">Orange Ginger Icebox Cake</span></strong></p>
<ul>
<li>1 package ginger wafer cookies</li>
<li>1 package orange wafer cookies</li>
<li>3 cups heavy cream</li>
<li>4 T sugar</li>
<li>1 T almond extract</li>
<li>1 t cinnamon</li>
<li>dark chocolate (saved)</li>
<li>sliced almonds (toasted)</li>
</ul>
<p>Beat cream, sugar, almond extract, and cinnamon with an electric mixture until light and fluffy.  <strong></strong></p>
<p><strong>  </strong></p>
<p><strong>NOTE</strong>:  In a crunch 2 containers of Cool Whip mixed with almond extract and cinnamon will also work. </p>

<p>Arrange 7 wafer cookies in a circle on a flat serving dish.  Top with a layer of whipped cream and repeat until all cookies have been used and top with a layer of cream.  Relocate to the fridge/freezer immediately and keep refrigerated! </p>

<p><strong>MORE NOTES</strong>:  Taste definitely trumped appearance, but this being my very first Icebox Cake and the taste being about a 9, I decided to post nonetheless.  I also fell victim to relocation issues having to move the cake from my car, to the fridge at work and finally at the end of the day to book club.  Next time I would choose a more mobile dessert, but despite the less than perfect appearance it was fantastic.  Finally, get creative with the flavors - look at the <a href="http://www.annasthins.ca/pages/products_us.htm" target="_blank">possibilities</a>!</p></blockquote>
